Creating a healthy meal for your family doesn’t have to be a hard task. Today I’m showing you how to make a delicious, heart healthy vegetable soup right from my kitchen.

Financial Benefits

Cooking soup at home allows you to make a large batch of health soup at a fraction of the cost compared to purchasing the same amount in cans or containers from the store.

Not only will you save on making these large batches but you can also use them all week long for your meals or freeze the remainder to have for busy days when you just don’t have time to cook. Freezer meals are a great way to have healthy mood on hand during a time crunched time which will save your health and your budget since you won’t be stopping for convenience foods.

Impacts of Store Bought Soup on Health

Soups created in mass production that we find in stores have several downsides. Let’s discuss some of these reasons quickly so that I can show you why a homemade soup is the better way to go when you are focusing on your health.

Sodium Content

One of the issues I have found with store bought soups is the amount of sodium found in them is extremely high. Added sodium can have a negative impact on your body so it’s important to avoid large amounts when possible.

Ingredients are Not so Healthy

Another thing to note with processed soups is that they really aren’t full of healthy ingredients. Oftentimes, you will see that they are healthy in carbohydrates with a few vegetables sprinkled in for color.

When you make a homemade soup the opposite is possible. You can create a soup full of vibrant colors, fun textures and amazing flavor.

My Delicious, Heart Healthy Vegetable Soup Recipe

This is my favorite recipe to use almost year round but especially during the cold winter months that we experience in the Northern climate here in Minnesota.

As mentioned above I will make a large batch of this soup and eat it over the course of a week as my easy lunch option.

Written Vegetable Soup Recipe

Base Ingredients

  • 1 medium onion (diced)
  • 1 stalk celery (diced)
  • 1 cup mushrooms (rough chop)
  • 4 cloves garlic (grated)
  • a dash of extra virgin olive oil
  • salt and pepper to taste

Soup Ingredients

  • 1/2 a zucchini (diced)
  • 4-6 small red potatoes (diced)
  • 1 carrot (diced)
  • 1/2 head of cabbage (rough chop)
  • 1/2 green pepper (diced)
  • 1 can of garbanzo or navy beans
  • 1 jar of good quality salsa
  • 1 box of broth (low sodium preferred)

Directions

  1. Prepare base items and saute for 3-5 minutes in extra virgin olive oil (until softened and translucent).
  2. Add soup ingredients to pot (except for bean) and let boil for 10 minutes.
  3. Check potatoes and firm vegetables to ensure they are cooked as desired.
  4. Add your choice of beans and stir in gently.
  5. Garnish with optional add on ingredients.
  6. Enjoy!

Optional Add On Ingredients

  • endamame
  • corn
  • peas
  • cilantro or parsley (garnish)
  • avocado
  • meat of your choice

Storage

This soup does wonderful when stored in the fridge or freezer. If stored in the freezer be sure to seal it in an air tight container and use within one week.

Storage in the freezer can last for 3-6 months when stored in an air tight container. Be sure to let your soup cool completely before freezing and leave head space inside of your container for the juices to expand as they freeze. Proper labeling will also make it easy for you to grab this quickly on a busy day.
