Today’s recipe is for chia breakfast pudding. This recipe is super fast to prepare and is a great recipe to have your kids help you prepare. Let’s whip up a batch right now!

Chia Breakfast Pudding Recipe

  • 20 oz can of crushed pineapple (do NOT drain, keep the juices)
  • 1 cup chia seeds
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp. vanilla
  • plant based milk of your choice, use to adjust pudding to desired creaminess

Mix all ingredients. Add plant based milk so you get the desired consistency that you prefer for your pudding. Let sit in refrigerator for at least two hours. Enjoy! You can add more milk when serving if you choose.

This recipe is perfect for a grab and go breakfast or healthy snack. You will also find that it is very budget friendly since one batch makes a LOT of pudding for you to enjoy.
